G is for Ginger (Bread)


PALEO GINGERBREAD CHIA PUDDING (Serves 2-4)  

INGREDIENTS: (all organic if possible)  

1/2 cup full-fat canned coconut milk 
2 tsp maple syrup 
1 tsp molasses 
1 tsp pure vanilla extract 
1/2 tsp ginger 
1/2 tsp cinnamon 
1/4 tsp cloves 
1/4 cup chia seeds 

DIRECTIONS:  

Mix all ingredients together except the chia seeds. Stir in the chia seed. Pour into small glass containers. I used four 4 oz. mason jars. Cover and place in fridge overnight.

Gluten-Free Berry Cobbler



Berry Cobbler
(Gluten-Free)

3 cups berries
1/2 cup almond flour
1/4 tsp sea salt
4 Tbsp organic grass-fed butter
1/2 cup xylitol (natural sweetener)


Put the berries into 4 half-pint canning jars. Combine the almond flour, sweetener, and sea salt. Whisk with a fork and pour it on the fruit. Then top with a generous pat (1 T) of butter. Put the jars in a square baking dish and bake at 350 degrees for one hour.

Let the jars cool completely then put the lid on and store in the refrigerator for up to a week. You can also top with cocoa nibs, or chopped nuts and seeds!

Heart Attack (Heart Healthy Clean Recipes for Valentine's Day)

Breakfast, lunch, dinner, dessert, and a drink for Valentine's Day! Heart-healthy foods for the day of LOVE! Be sure to use all organic ingredients if possible.



Strawberry Coconut Smoothie
Ingredients:
1 cup coconut milk
1 frozen banana, sliced
2 cups frozen strawberries
1 teaspoon vanilla extract
1 scoop plant protein (I use hemp) 

Directions:
  1. Add all ingredients to a blender and blend until smooth.
  




Chunky Red Beet and Tomato Soup

Ingredients:
1 Tbsp extra-virgin olive oil 
1 medium onion, cut into 1/2-inch dice 
2 garlic cloves, minced 
1 28-ounce can whole peeled Italian tomatoes, crushed by hand, juices reserved (low sodium)
2 large beets (1 1/2 pounds), peeled and cut into 1/2-inch pieces 
2 medium carrots, cut into 1/2-inch pieces
 ¾ tsp ground cumin, plus more for serving 
¼ tsp cayenne, plus more for seasoning 
Sea salt 
Whole-milk plain organic Greek yogurt, for serving

Directions:
  1. In a large pot, heat the olive oil. Add the onion and garlic and cook over moderate heat, stirring occasionally, until softened, 8 minutes. Add the tomatoes and their juices, the beets, carrots, 3/4 teaspoon of cumin and 1/4 teaspoon of cayenne. Season with salt and add enough water to cover the vegetables by 1 inch. Bring to a boil, cover partially and simmer over low heat until the vegetables are very tender, about 1 hour. Remove from the heat and let stand for at least 30 minutes to allow the flavors to develop.
  2. Reheat the soup and season with salt, cumin and cayenne. Serve topped with a dollop of yogurt and a pinch of cumin.
Make Ahead: The soup can be refrigerated for up to 3 days.




Pomegranate Curry Cod 


Ingredients:
2 cans coconut milk  
1/2 tsp turmeric
1/2 tsp cumin
1 tsp ground ginger
1/4 tsp onion powder
1/4 tsp cinnamon
2 lbs cod fillets (wild-caught)
1/2 cup pomegranate seeds
Himalayan Pink Salt, to taste


Directions:

  1. Combine everything except for the cod, pomegranate seeds and pink salt.
  2. Marinate the cod in this mixture for at least 30 minutes.
  3. Preheat oven to 400 degrees.
  4. Put the fish on a baking sheet, setting the marinade aside.
  5. Bake the fish for 12 to 18 minutes, or until it flakes easily with a fork.
  6. Heat the marinade in a saucepan, bring to a boil and then reduce heat.
  7. Spoon the heated marinade over the cod on plates.
  8. Top with pomegranate seeds and sprinkle with pink salt.



Chovocado Pudding

Ingredients:
1 ripe avocado
1/4 cup cocoa powder
1/4 cup chopped banana

Stevia, to taste
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract


Directions:
  1. Peel and quarter a ripe avocado. 
  2. Put all the ingredients in your Magic Bullet (or a blender/hand mixer) and blend until smooth.


Red Hawk

Ingredients: 
1 ½ oz Prairie Organic Vodka
1 ½ oz JUST pomegranate juice
A squeeze of fresh lemon juice

Directions:

  1. Shake over ice and strain into a martini glass. 
  2. Garnish with a fresh mint leaf.

Cookies for Santa


Santa deserves some healthier treats as well!  This recipe will not spike his blood sugar or cause inflammation so he has enough energy to survive the rest of his trip!


Grain and Refined Sugar- Free Sugar Cookies
 

Ingredients: (all organic if possible)


  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 eggs
  • ½ cup xylitol
  • 1/2 cup coconut oil
  • 1 tsp baking powder
  • 2 tsp pure vanilla extract
  • 1/2 tsp sea salt
  • 1/4 cup unsweetened almond milk

Directions: 


  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix all wet in another.
  4. Add wet to dry and mix.
  5. Roll dough into balls.
  6. Place them on a lined baking sheet, and then flatten each ball with your palm.
  7. Bake for about 12-15 minutes.
  8. Makes 15 cookies.

Gooey and Oh So Good!

I keep seeing caramel apples everywhere! They were one of my favorite snacks when I was younger.  My mom would cut up apples for my brothers and I and sprinkle them with cinnamon and sugar! Here are the typical ingredients used in the store-bought varieties. I took this photo at Cub Foods yesterday. Lots of sugars, hydrogenated oils (trans-fats) and Genetically Modified Organisms (GMOs)! Eek!! 



Healthier Alternative!! 

Caramel Apple Dip

 Ingredients:

1 cup Medjool Dates, pitted (about 8-10)
2 Tbsp Full-Fat Coconut Milk, canned
¼ tsp Sea Salt
½ tsp Pure Vanilla Extract

Directions:

1. Combine all ingredients in the bowl of a food processor and process until smooth.  
You may need to occasionally scrape down the sides.  If you double the recipe, it will be easier to process if you have a larger capacity food processor.
2. Store in an airtight container in the refrigerator for up to 2 weeks. 

NOTE: Be sure to use organic apples! They are on the Dirty Dozen list.

Tasty Balls

I had a little too much fun making these delicious, no refined sugar treats for my future sister-in-law's bridal shower tomorrow! I don't like to follow recipes and the mixture ended up less solid than anticipated, so I improvised and added more coconut so they would stick together. I'm calling them Raw Chocolate Snowballs! Watch out, they are addicting!! LOL! Bet you can't eat just one! ;-) 


Raw Chocolate Snowballs

Ingredients:

1 1/2 cups chopped raw walnuts
Pinch of  sea salt
1 cup pitted unsweetened dates
1 tsp real vanilla
1/3 cup unsweetened cocoa powder
1/2 cup unsweetened coconut


Instructions:

-Add walnuts and salt to a blender or food processor. Mix until the walnuts are finely ground.
-Add the dates, vanilla, and cocoa powder to the blender. Mix well until everything is combined. -With the blender still running, add a couple drops of water at a time to make the mixture stick together.
-Using a spatula, transfer the mixture into a bowl. Using your hands, form small round balls, and then roll them in the coconut to cover. 
-Store in an airtight container in the refrigerator for up to a week.

Eat a Slice of This- Sans the Sugar Crash

As Thanksgiving approaches, turkey is typically the talk of the
town. Stuffing, cornbread and cranberry sauce may round out
your main course, but if you're anything like me, you crave
what comes next! 

This traditional pie will satisfy your sweet cravings without setting you up for a sugar crash. (xylitol and stevia are the only two natural sugars that do not spike your blood sugar levels) YUM! 


Pumpkin Pie with Almond Crust


Almond Crust

• 1½ cups blanched almond flour
• 1 pinch of kosher or sea salt
• 1/2 pinch of stevia or xylitol to very lightly
sweeten (less is more)
• 3 tablespoons extra virgin olive oil

Pie
• 1 (15 oz.) can (preferably organic) pumpkin puree
(no sugar or other additives, check the label)
• 3/4 cup “Spoonable” brand stevia or equivalent
OR 2/3 cup xylitol (OR LESS – TASTE IT! Let the
spices do the talking!)
• 1/2 teaspoon salt
• 1 teaspoon cinnamon
• 1/2 teaspoon ground ginger
• 1/4 teaspoon ground cloves
• freshly grated nutmeg (if you have it on hand)
• 4 oz. organic coconut cream
• 8 oz. unsweetened almond milk, original or vanilla
flavor
• 1 slightly cooled almond pie crust (see recipe
below)

Preparation

Almond Crust
Mix dry ingredients. Add extra virgin olive oil and thoroughly combine. Press into glass pie plate.
Bake at 350 degrees for 7 to 8 minutes. You don't want the crust to brown.
Remember to turn up the oven to 425 once the crust is done. You bake the pumpkin pie at this
higher temperature for just the first 15 minutes.

Pie
Preheat oven to 425 degrees
1. Combine all the ingredients. You could use a high speed blender.
2. Pour into a cooled almond pie crust.
3. Bake 15 minutes at 425 degrees.
4. Reduce heat to 350 degrees and bake for an additional 35 - 45 minutes.

Crazy Good Carrot Cake Balls!











Ingredients:
  • 6 Dates
  • 2 Large Carrots
  • 1 Cup of Almonds
  • ¼ Cup of Coconut (shredded)
  • ¼ Cup of Pecans
  • ¼ Cup of Raisins
  • ¼ Cup of Walnuts
  • 2 Tsp of Cinnamon
  • 1 Tsp of Coconut Oil

Directions:
1. Pit the dates.
2. Shred the carrots.
3. Combine all the ingredients in a food processor until thoroughly combined in a semi-chunky mass. Avoid over processing the nuts to prevent releasing too much of the oils from the nuts.
4. Shape into balls.
5. Chill in the refrigerator for 1-2 hours prior to serving.
