Adding more greens like kale into your diet this year?  Here are a few quick tips!

*Always buy organic kale; it is sprayed with lots of chemicals making it one of the Dirty Dozen. The kale should be firm with fresh, deeply colored leaves and hardy stems.

*To store, place kale in a plastic storage bag removing as much of the air from the bag as possible. Store in the refrigerator where it will keep for 5 days. The longer it is stored, the more bitter its flavor becomes. Do not wash kale before storing because exposure to water encourages spoilage. Loss of some nutrients in kale—for example, its vitamin C content—is slowed down through refrigeration.


THE ULTIMATE GREEN SMOOTHIE  (Serves 2)  


INGREDIENTS: (all organic if possible)


2 cups coconut water or unsweetened almond milk
2 cups fresh spinach, tightly packed
1 cup kale, stemmed and tightly packed
1 medium avocado, pitted
2 frozen bananas
5 dates, pitted (use stevia if you want a low glycemic version)
1 teaspoon Spirulina powder
1 teaspoon Chlorella powder
1/2 teaspoon Maca powder
1/2 teaspoon ground cinnamon
1/4 to 1/2 teaspoon Himalayan sea salt


DIRECTIONS:


Blend all ingredients until smooth, pour into glasses and top with cinnamon.

Digestive upset?


Sip apple cider vinegar. As many as 90 percent of Americans produce too little stomach acid. This acid, known as hydrochloric acid (HCL), is responsible for unlocking digestive enzymes, promoting digestion and improving nutrient absorption. Low acid means the body is not properly absorbing nutrients from food, so you may be prone to deficiencies even if you have a balanced diet! Acid reflux is the result of producing too little stomach acid. By consuming 1 to 3 teaspoons of raw, organic apple cider vinegar (ACV) with the mother (I use Bragg's) diluted in water about 20 minutes before eating, ACV can help to increase stomach acid and nutrient absorption. Be sure to swish water in your mouth after drinking in order to protect your tooth enamel from erosion.

Make Peace With Food



There is no one size fits all approach to eating.  Each person is different.  I admit I've hated food for most of my life...I've used and abused it to stuff my feelings, purge them out, and avoided it altogether.  Making peace with food is the best thing you can do for your mind and body. Food is not the enemy!  Think of it as something needed to fuel your body like how a car needs gas to run. You cannot run sufficiently without it. Winter blues getting you down? Having enough omega-3 fatty acids seems to put us in better moods. Include more nuts, fish, and seafood (like salmon, sardines, mackerel, crab and oysters) in your diet to get these happy healthy fats!
