Coconut Oil Fudge


COCONUT OIL FUDGE  

INGREDIENTS(all organic if possible) 

1/4 cup coconut oil  
1/4 cup cocoa powder  
1/2 teaspoon pure vanilla extract 
Stevia to taste 
Pinch of sea salt 
Optional: 2 drops peppermint essential oil  

DIRECTIONS 

  1. Measure 1/4 cup of coconut oil and scoop it out into a mixing bowl. Whip the coconut oil with a stand or hand mixer until it’s light and fluffy. Note: If your coconut oil is room temperature and already liquid you can skip this step. 
  1. Mix the whipped coconut oil, cocoa powder, vanilla and salt together. Slowly add stevia.  Mix in 2 drops of peppermint essential oil if using. 
  2. Pour fudge into a 9×5 inch pan (this is a bread size pan). Spread fudge evenly cover the pan with a lid or plastic wrap. Refrigerate until fudge is set and hard, about 4 hours.

Sugar High





After all these classes I've been giving on sweets and sugar I spotted this! I want to point out just because something is organic or at the natural health food store does NOT mean it is necessarily good for you. This hot cocoa boasts a whopping 14 grams of sugar per serving! That is equal to 3.5 teaspoons of sugar.  The first ingredient on the food label is cane sugar.  Something to take note of this winter when you are looking for a hot beverage to warm you up!! S'more Goodness


S'mores are a 4th of July staple for most families! Here are a few things to use/add to make them a tad bit healthier!

Some healthier alternatives for Halloween Night!


Mini dark chocolate bars- buy in bulk to save money! 

Yummy Earth Products – these are some of the cleanest candies out there… soy free, dairy free, nut free, GMO free, high fructose corn syrup free, and the list goes on.  (They make: gummy worms, gummy bears, gummy spiders, fruit snacks, sour beans, lolli-pops, etc)

Xylitol gum – Xylitol is a healthier option than aspartame (an artificial sugar), which is found in most sugar-free gum. Fortunately, there are many gums sweetened with Xylitol hitting the market. Even recommended by dentists!

Annie’s Fruit Snacks – yes, they have sugar but they are free of artificial dyes, gluten, hydrogenated oils, and a lot of other nasty stuff. Plus, they have fun Halloween packs that are great to giveaway!

Raisins – an oldie but goodie, this dried fruit is a natural as it gets.

Fruit leather – Made of 100% real fruit, this is a great treat that doesn’t rot the teeth.  Check out Target for some less expensive options!

Stickers – Who doesn’t love stickers?! Find some cute Halloween-themed ones and give them away.  Walgreens sells them in small packs!

Spider rings – A treat that doesn’t involve food, spider rings are fun and scary at the same time! Very in-expensive too!

Halloween pencils- Anyone will love a practical and useful treat! Check out your local dollar store.

Chia Seed Power Pudding

I've been a little obsessed with these lately! Packed with fiber and loaded with calcium, healthy fats, and protein! It's filling so you will not be hungry 30 minutes later and can still get your chocolate fix! 



Chia Seed Power Pudding 

Ingredients: 

1 3/4 cups unsweetened chocolate non-dairy milk (almond or coconut are my personal favs)

1/4 cup chia seeds

3 tablespoons raw cacao powder (baking cocoa will also work)

1 scoop Garden of Life RAW chocolate protein powder

Dash of pink Himalayan sea salt

1 tablespoon organic maple syrup or raw honey (or use Stevia- sweeteners are completely optional though!)

Dark chocolate shavings for garnish


Directions: 

Add all of the ingredients to a large glass jar with a lid, give it a quick stir, then put the lid on. Shake it like crazy to mix it all up. Refrigerate until very thick and pudding-like, at least 4 hours or overnight, shaking or stirring occasionally. Serve the pudding chilled with whatever topping you’d like. See my suggestions below.

Optional add ins/toppings: goji berries, nut butter, coconut, bananas, nuts, pomegranate seeds and etc.

Frosty and DELICIOUS (licking my lips as I type this)

Summer means ice cream, malts, popsicles, and anything cold and frozen! I've been noticing a lot of families frequenting the local Dairy Queen in my south Minneapolis neighborhood. Here is a healthy, clean eating version of those tasty chocolate malts or Wendy's Frosties you may have grown up on! I blend this up when I am craving chocolate





Cocoa Smoothie

Ingredients:

1-2 scoops chocolate whey or chocolate vegan protein powder
1⁄4 -1⁄2 can coconut milk
1 teaspoon organic cocoa or cacao powder 
1⁄2 - 1 teaspoon spoonable stevia
1 tablespoon hemp seed or coconut oil (optional)
1 teaspoon almond butter (optional)

*Add water or ice to desired consistency. Blend. And of course drink it out of a fancy glass! :-)

Tasty Balls

I had a little too much fun making these delicious, no refined sugar treats for my future sister-in-law's bridal shower tomorrow! I don't like to follow recipes and the mixture ended up less solid than anticipated, so I improvised and added more coconut so they would stick together. I'm calling them Raw Chocolate Snowballs! Watch out, they are addicting!! LOL! Bet you can't eat just one! ;-) 


Raw Chocolate Snowballs

Ingredients:

1 1/2 cups chopped raw walnuts
Pinch of  sea salt
1 cup pitted unsweetened dates
1 tsp real vanilla
1/3 cup unsweetened cocoa powder
1/2 cup unsweetened coconut


Instructions:

-Add walnuts and salt to a blender or food processor. Mix until the walnuts are finely ground.
-Add the dates, vanilla, and cocoa powder to the blender. Mix well until everything is combined. -With the blender still running, add a couple drops of water at a time to make the mixture stick together.
-Using a spatula, transfer the mixture into a bowl. Using your hands, form small round balls, and then roll them in the coconut to cover. 
-Store in an airtight container in the refrigerator for up to a week.
