Chilly Night



BISON CHILI

421 calories per serving.  Makes dinner for two, with leftovers for lunch. Recipe makes 4 servings.  

INGREDIENTS: (all organic if possible)

  • Tbsp. extra virgin coconut oil 
  • 1/2 medium yellow onion, diced 
  • 3 stalks celery, diced 
  • 2 cloves garlic, sliced 
  • 1-3/4 lb. ground bison  
(Elk, venison, or beef may be substituted) 
  • 2 tsp ground cumin 
  • 2 tsp chili powder 
  • 2 tsp thyme 
  • 1 (12 oz.) jar salsa (low sodium and no sugar added) 
  • 1 (8 oz.) can diced tomatoes (low sodium) 
  • 1 (7 oz.) can mild green chilies (low sodium) 
  • 2 tsp sea salt (optional)

DIRECTIONS: 

Heat a heavy bottomed soup pot over medium-high heat.  When the pan is hot, add coconut oil. Add onions, celery and garlic and sauté until onions are translucent, about 3 or 4 minutes. Next, add ground bison, cumin, thyme, and chili powder. Stir while this cooks, about 5 to 6 minutes. Pour in salsa, green chilies, tomatoes and sea salt. Simmer for at least 1 hour.

Save money by cooking your own beans, peas and lentils!  You can buy a whole bag of dried beans, peas, and lentils, and cook up what you need. Or, you can spend twice the money to get them canned. Cooking them yourself just requires a little advance planning, since you need to soak them overnight or put them in a slow cooker. Canned food usually contains way more sodium than we want or need! I really found this page from Whole Foods helpful. It breaks down all sorts of different types of beans and explains how to prepare and cook them.

Eat beans! These legumes are full of fiber, (get that colon moving!) protein, (build muscle) iron, and B vitamins! (more energy) Three quick options you can whip up with few ingredients. Be sure to keep a few extra cans in your pantry! 


Red Bean Salad

1 Can red kidney beans; rinsed (no salt added)
Corn
Chopped red & green bell peppers
Chopped cilantro
Hot pepper sauce 
*You can also add an avocado! 




Chickpea Quinoa Salad

1 Can chickpeas; rinsed (garbanzo beans) (no salt added) 
Cooked quinoa
Baby spinach
Cooked, cubed beets
Feta cheese









Black Bean and Mango Salsa


1 Can black beans; rinsed (no salt added) 
Mango, peeled and chopped
Diced red onion
Lime juice
Ground cumin

Brownies Never Tasted So Good

Saturday was my friend's birthday and I wanted to surprise her with some goodies! I decided on Black Bean Brownies. They are gluten and grain-free, sweetened with xylitol and stevia (natural sugars that do not affect blood sugar levels) and packed with fiber and protein! They were a huge hit especially with her kids! They taste NOTHING like black beans, don't worry! ;-)

Fiber- Are you getting enough?


We hear a lot about how important it is to include fiber in our diet.  The “Western diet” is made up of mostly highly processed and refined foods. White bread, white rice and processed pastas are stripped of dietary fiber. Canned vegetables instead of fresh and raw, fruit juice instead of whole fruit, refined cereals instead of whole grains…our bodies are literally starving for fiber!!! 


Two-thirds of the common diet come from corn, wheat, rice and soy, all highly processed and stripped of their nutrients. They are quickly converted into empty calories, unhealthy carbs and instant sugar in our bloodstreams.This lack of fiber contributes to heart disease, colon disease, cancer, diabetes and obesity.

Fiber consists of carbohydrates and other compounds that make up the cell walls of plants that releases organic acids in the body that provide us fuel, cleanse the digestive tract, help the liver to function, and rid our bodies of toxins, pathogens, added cholesterol and extra sugar.

There are two types of fiber: soluble and insoluble. Soluble fiber dissolves into a gooey glob. This traps fats and sugars, bacteria and toxins and helps move them out of the body. Insoluble fiber does not dissolve. Its stiff components scrub the digestive tract lining, removing plaque, trapped toxins and other material.

Both types of fiber help us to feel fuller, eat less and stabilize blood sugar levels. They stimulate digestion and elimination, increase our metabolism and help maintain electrolyte balances in the body.

Whole foods are the best source of dietary fiber: raw vegetables, real fruit and sprouted whole grains. Avoid packaged foods like bars or cereals that claim to give you a vast majority of the fiber you need.

The "Real" Food Pyramid

I get numerous questions from people asking what they need to eat be healthy.  I hate the term "diet" and feel it should never be used. I prefer "healthy and clean eating."  You can go ahead and ditch the standard food pyramid that promotes ridiculous amounts of carbohydrates from starchy grains and promotes inflammation, not to mention grains turn into sugar in the body within 4 seconds of consumption!!  Start following these recommendations and I guarantee you will look and feel amazing!! Organic is best! And also be sure to drink half your body weight in ounces of purified water a day!

Vegetables and Herbs: 5+ servings a day


Fruits: 2-5 servings a day



Raw Nuts and Seeds: 1-3 servings a day

Beans and Lentils: 0-2 servings a day
















Sprouted whole grains: 0-1 servings a day

Meats (grass-fed) , fish (wild caught), and raw dairy: 1-3 servings a day





Red wine, dark chocolate, other treats: 0-1 servings a day/sparingly :-)
