Pizza Party




A grain-free version of pizza your kids will love! 

BELL PEPPER PIZZAS (Makes One Serving)  

Ingredients: (all organic if possible)  

1 large green bell pepper 
¼ cup pizza or spaghetti sauce 
¼ cup grated cheese 
Pinch of red pepper flakes 
Pinch of basil or parsley 
As many toppings as you can fit! 

Directions:  

  1. Pre-heat your oven or toaster oven to 350 degrees F. 
  1. Slice off each of the four sides of your pepper and lay flat on a baking sheet. 
  1. Top with sauce, then cheese, followed by any and every veggie in your refrigerator! I added broccoli and tomatoes to mine. 
  1. Bake for 10 minutes, flipping your oven to broil towards the end to make the cheese nice and bubbly. 
  1. Add a pinch of red pepper flakes and basil/parsley if desired and dig in!

Jackie's Health Tip of the Week 11/6/16



Try a breakfast without grains! Nix the cereal, smoothie, or eggs this week and mix it up! This recipe is easy to whip up and contains few ingredients.  Full of protein, fiber, and healthy fats! Make ahead of time and eat throughout the week! 


SWEET POTATO AND BEET HASH 

INGREDIENTS: (Organic if possible)

2 large sweet potatoes, peeled and cut into cubes
2 large beets, peeled and cubed
2 Tbsp. coconut oil, melted
Sea Salt and Black Pepper
4 slices turkey bacon (nitrate and antibiotic-free)
2 small onions, diced

DIRECTIONS:


  1. Preheat oven to 400 degrees F. Toss the sweet potatoes and beets with coconut oil and season with sea salt and pepper. Place on a baking sheet and bake for 25-30 minutes.
  2. In a skillet over medium heat, add the turkey bacon and cook until bacon is crispy. Add the onions and season with sea salt. Cook until onions caramelize. Add the sweet potatoes and beets to the pan and stir, cooking for another 5 minutes.

Recipe: Something Light and Tasty for SPRING

Kale and Apple Salad


Ingredients: 

2 tablespoons organic extra-virgin olive oil
2 teaspoons apple cider vinegar (Braggs) 
1 teaspoon fresh squeezed organic lemon juice
⅛ teaspoon Himalayan sea salt
6 cups torn organic kale leaves, big ribs removed and discarded
½ an organic apple, cut into thin, 1- inch pieces (Gala apples taste the best with this)
⅓ cup raw organic walnuts, chopped and lightly toasted
3 to 4 tablespoons crumbled raw blue cheese (optional) 

Directions: 

In a small jar, combine the olive oil, vinegar, lemon juice, and salt. Secure the lid and shake vigorously to combine.

Place the kale leaves into a large salad bowl and, using your hands, sort of massage the olive oil mixture into the leaves.

Throw the apples, walnuts, and blue cheese (optional) on top of the kale and lightly toss to combine.

Gluten-Free-Too Expensive?


This is a typical "Gluten-Free" aisle in a grocery store. As you can see all of the food is processed and in a box, bag, or a can. (Dead Food)  Fruits, vegetables, meat, nuts, beans, seeds, and fish are naturally gluten free! Eat clean and you will not have to spend $6.00 on a box of gluten-free cereal, crackers, bread, or cookies! Just a tip! ;-)

Walden Farms- Calorie Free?

One of my clients sent me a message asking about these products because her family buys them so I decided to go to the grocery store and do some research! Here are a few things I found from this company at the local store in the "Health Market" section.





On a quick glance, the company looks impressive, amazing… almost a little too good to be true.

No Calories, Fat, Carbs, Gluten or Sugar of any kind!

From the company website:

Walden Farms irresistibly sweet calorie free specialties are prepared with real fruit extracts, concentrated natural flavors, rich cocoa and other natural ingredients, all sweetened with Splenda. Our savory specialties are made with hundreds of freshly ground herbs and spices, concentrated natural flavors and the finest aged imported and domestic vinegars.

The good news is, they wrote it right on their website. Splenda. Splenda is one of the worst sweeteners you could consume! Google the danger of it and see for yourself!

Save 330 calories a day, 10,000 calories a month and lose 34 lbs a year! -more deceptive marketing claims to draw you in! 

Why would you want to eat a peanut “spread” that doesn't even have peanuts in it? It’s FLAVORED to taste just like natural peanut butter. Sounds natural right?

Their strawberry spread features “strawberry flavor”, “natural flavors”, and cellulose gel  in addition to Splenda. Wouldn't you rather just have real strawberry preserves? The natural sugar in the REAL strawberry preserves might be higher, but its NATURAL sugar… not artificially concocted stuff. Time to get back to eating real food! 

Several of the products have maltodextrin, cellulose gel, several types of vegetable gums and one more little tidbit I learned along the way – only the suggested SERVING size contains no calories, so if you use more, you're getting some calories you might not realize were there! Remember, my motto is: Count chemicals, NOT calories for health! ;-)

Acne- Zits Be Gone


Many people try using creams, prescriptions, and harsh chemical face cleansers to get rid of acne. The solution is inward! 

Here are a Few Suggestions: 


Acne and Candida go hand in hand. Candida is a bad yeast and  bacteria that grows in the body. You can develop it from using antibiotics, birth control pills, excess sugar in the diet, and drinking chlorinated water. Any type of skin condition stems from body toxicity, stress, hormonal imbalances, and nutrient deficiencies. 


Try removing all sugar from your diet. Use Stevia instead or raw local honey. Limit grain intake- especially gluten because it causes inflammation in gut. Eczema is really gut inflammation!! Lower your fruit intake-berries and green apples have the lowest sugar content. Avoid hydrogenated oils- switch to extra-virgin, cold pressed organic coconut oil. (has anti-microbial properties- kills off the bacteria) Dairy products also cause allergic reactions  and can worsen the condition. 


Foods to eat:

Foods high in fiber-chia seeds, flax seeds, almonds and other nuts, veggies. This will help balance out your blood sugar levels.  Consume more protein- organic chicken, turkey, organic eggs, grass fed beef, sprouted vegan protein (ask me about this), wild caught fish.  




Supplements and More:
  • Probiotics- puts good bacteria in the gut, helps immune system, at least 50 billion IUS daily.
  • Zinc- will repair gut lining- 50 mg/day.
  • Antioxidants- elderberry extract- put in smoothies
  • Candida Cleanse
  • Fish Oil (Omega 3's)- helps with inflammation; aids in healing. 
  • Face wash-use one containing tea tree oil, willow bark, aloe;  kills bacteria and moisturizes.

Clean Eating During Super Bowl Festivities

One of my clients said she dreads the Super Bowl parties because she never knows what she can eat and ends up gorging herself on the nachos, dips, mayo salads, and wings! My solution is to make and take a few clean eating recipes to the party and just eat what you bring! Here are a few that will be a hit at the party! (don't tell anyone they are healthier versions! ) ;-) 



Baked Meatballs 

Ingredients:

1/4 cup onions, minced
1 Tbsp. grape seed oil
2 pounds grass-fed ground beef
2 eggs
3/4 cup quinoa flakes
1/2 cup raw milk
1/8 tsp. salt
1/2 tsp. pepper
2 tsp. onion powder
1/2 tsp. garlic powder

Directions:

1. Preheat oven 400 degrees F.
2. Grease baking sheet lightly with oil.
3. Cook onions in small skillet with grape seed oil
4. Mix other ingredients in bowl, and then add onions.
5. Roll into 2 inch balls, then spread out on baking sheet
6. Bake for 12 minutes.


Sweet Potato Fries

Ingredients:

1-1 1/2 lbs. sweet potatoes
1/4 c. grape seed or coconut oil
1/2 tsp. sea salt
1/2 tsp. paprika
1/4 tsp. cinnamon


Directions:

1. Preheat oven to 425 degrees. Peel potatoes and cut into strips about 1/2” wide on each      side. Place all ingredients in seal-able plastic bag and shake until potatoes are completely coated. Spread onto a baking sheet in a single layer.
2. Cook for 30 minutes, turning every 10 minutes.
3. Transfer immediately to a paper towel lined plate and serve warm.



Hummus 

Ingredients:


  • 2 cans organic garbanzo beans (low sodium)
  • 1/4 c. raw sesame seeds
  • 1 Tbsp. olive oil
  • 1/4 c. lemon juice
  • 1 garlic clove, peeled
  • 1 tsp. cumin
  • Sea salt to taste


Drain and rinse garbanzo beans, reserving 1/4 c. liquid. Place all ingredients in a blender and blend. Add more water or olive oil until desired consistency is reached. Serve with fresh raw veggies or gluten-free crackers! 



Boneless Buffalo Chicken Tenders 

Here's another version of an All-American favorite! Typically these are fried in damaged oils (bad fats), loaded with refined flours, additives, and of course conventionally raised chicken. This recipe actually has organic chicken, good fats, extra nutrients in the breading and nothing artificial!

Ingredients:

  • 2 packages organic chicken tenderloins
  • 2 organic eggs
  • 1/2 cup finely ground almond meal
  • 1/4 cup coconut flour
  • sea salt
  • pepper
  • granulated garlic
  • hot sauce (check ingredients- no MSG, no sugar, no additives)
  • coconut oil (about 1/2 jar)


Directions:

Sprinkle chicken tenderloins with salt and pepper. Dip into egg and then almond / coconut flour mixture. For best results, refrigerate for about 15 minutes.

Meanwhile, heat coconut oil to medium/high heat in a non-teflon pan (stainless steel, cast iron or thermalon). Gently place chicken tenders in the pan in batches, doing only 4-5 at a time. Do not crowd the pan. When brown around the edges, flip and brown the other side. (Breading will be very fragile to be careful). Transfer to a baking dish and bake at 350 degrees until no longer pink in the middle.

When done, they can be eaten plain or made into buffalo tenders. Simply sprinkle with garlic powder and drizzle with hot sauce on both sides.




Grain-Free Personal Pizzas 

Yield: Approx. six 6-8 inch pizzas

Ingredients:

For Crust 

  • 2 cups almond flour
  • 2 cups tapioca starch/flour 
  • 2 cups coconut milk
  • 1/2 tsp sea salt 


For Toppings 

  • Cheese- less is better! Organic preferred! 
  • Sauce- no added sugar and low sodium 
  • Olives 
  • Bell Peppers 
  • Onions 
  • Mushrooms 
  • Protein/Meat- preferably organic and grass fed without antibiotics or growth hormones


Directions:

For Crust:
1.Mix ingredients in either a blender or bowl until smooth. 
2.Heat a skillet or griddle on medium-high heat and add a small amount of grass-fed butter. 
3.Pour a thin layer of batter onto griddle or skillet and allow to cook until bubbles form. 
4.Test to see if you can flip easily. If not, let cook longer. 
5.Cook on other side until slightly golden-brown. 
6.Preheat oven to 350 degrees F and place finished crusts in for a few minutes to crisp up. 

For Toppings: 
7.Place sauce on the pizza crusts and arrange cheese and toppings as desired. You may need to cook some of the toppings first if they are "liquidy", i.e. mushrooms, peppers, etc. 
8.Bake until cheese is melted. 
9.Cut into 4 pieces each and serve.

Ask The Nutritionist- Quest Protein Bars

What do you think of Quest Protein Bars? Are they okay? Thanks, I respect your knowledge!

Answer:

Hi Marcia! I hope you are doing well!  They contain a lot of protein, but are not organic. Some contain sucralose (artificial sweetener) although stevia is also used. The whey protein does not come from grass-fed, antibiotic free cows. And remember any bar like this is still processed and protein isolates can contain MSG.


Here is a list of the ingredients in one:


VANILLA ALMOND CRUNCH

Ingredients:

Protein Blend (Whey Protein Isolate, Milk Protein Isolate), Isomalto-Oligosaccharides* (Prebiotic Fiber), Almonds, Water. Contains less than 2% of the following:Sea Salt, Lo Han Guo, Sucralose, Natural Flavors.


Better choice: LARABARS or here is a recipe I use to make my own! 




Grain-Free No-Bake Cookie Dough Protein Bars

Ingredients:

1/2 c. Garden of Life RAW Vanilla Protein Powder

1/2 c. almond meal

1/2 c. almond butter (make sure ingredients are just almonds and sea salt!)

1/4 c. + 1 tbsp. extra virgin cold-pressed coconut oil

1/4 tsp. sea salt

1/2 tsp.  real vanilla

1/4 c. organic dark chocolate, chopped or you can use cacao nibs

Stir together until well combined. Press the dough into a pan to desired thickness, and freeze for 1-3 hours. Cut into bars, and store in the freezer or the refrigerator.

How to Avoid Looking Like a Bloated Reindeer Come January 1st

With the holiday season approaching, many of us find ourselves surrounded by festive food and the concern of weight gain. Studies have shown that the typical American may gain two to seven pounds over the six-week holiday season!!
The best way to avoid gaining weight over the holidays is to eat in moderation, keep a consistent exercise program and try my 10 tips! 


1. Stick to a regular routine with sleep and exercise. Many times feeling tired or stressed is mistaken for hunger. I get  VERY emotional when overly tired! LOL! 


2. Watch your alcohol intake. Alcoholic beverages metabolize to fat in our bodies contributing to excess weight gain. Try having a seltzer with a lime twist or a glass of water between alcoholic drinks to remain well hydrated. Other options: organic red wine, or vodka with water! No one likes dealing with drunken elves on spiked eggnog! ;-)





3. Eat a small, healthy meal before party time. It's a common misconception that you will lose weight by skipping meals. (Hello, eating disorders!!) The truth is your metabolism slows down causing you to store body fat if calories are too limited for too long. Another negative result is that you are more likely to binge later at night resulting in greater weight gains.





4. Don't stand by the food at the party. You will be less likely to partake in unconscious snacking all night if you instead move, mingle and socialize with friends!! Or, ladies, carry a clutch in one hand and a beverage in the other- your hands will be full and that leaves no fingers for nibbling on the sweets!







5. If you're hungry at the party, reach for the vegetables (without the dip), fruit or nuts . If you do host a party have plenty of water and healthy snacks available. (or bring a healthy option to the party and eat it!)





6. Eat slowly. It takes about 20 minutes for the stomach to register a "full" sensation and signal the brain that it's had enough. Slow down and listen to your body!





7. Set goals and keep a food journal. Plan your weekly food intake to include those treats or Christmas cookies in your diet -- in moderation, of course. Don't totally avoid sweets and holiday food; just plan for it and eat more fruit and vegetables during the week to allow for this. With this plan you can also avoid the guilty feeling afterward that can add to your stress level. And be sure to use natural sugars in your holiday recipes that will not spike your blood sugar. I suggest Stevia, dates, or Xylotil. And grain and gluten-free flours: almond and coconut!





8. Eat protein. Quality protein includes lean meats, seafood, chicken, turkey, eggs, nuts, seeds.  Protein will help you feel full and control your appetite.




9. Try to stay consistent with your workout routine. Don't fall prey to the excuse that you'll get back on track after New Years Day or when the weather warms up again. You may need to modify your program for the busy holidays. Do what you can, but keep it up, trying new fitness activities and cross training to keep things fresh and fun. My favorites: snowshoeing, ice skating, cross country skiing, BURST training! 





10. Always remain positive!! If you do have a slip up, don't worry or stress about it. Just get back on track the next MEAL, NOT day!
