Roasted Beet Hummus





ROASTED BEET HUMMUS (Serves 6) 

INGREDIENTS: (all organic if possible) 

1 small roasted beet
1 15-oz. can cooked chickpeas (mostly drained // 1 can yields ~1 3/4 cup)
1/2 large lemon (juiced)
1 pinch sea salt and black pepper
2 large cloves garlic (minced)
2 heaping Tbsp tahini
1/4 cup extra-virgin olive oil

DIRECTIONS: 

  1. Roast the beet in oven. 
  2. Once your beet is cooled and peeled, quarter it and place it in your food processor. Blend until only small bits remain.
  3. Add remaining ingredients except for olive oil and blend until smooth.
  4. Drizzle in olive oil as the hummus is mixing.
  5. Taste and adjust seasonings as needed, adding more salt, lemon juice, or olive oil if needed. If it’s too thick, add a bit of water.  Will keep in the fridge for up to a week.

Not Your Typical Boring Salad


FALL HARVEST ROASTED PEAR AND KALE SALAD (Serves 6) 

INGREDIENTS: (all organic if possible) 

2 cups of baby kale or other favorite dark leafy green 
2 pears 
2 tablespoons shallot, minced 
1 tablespoon Dijon mustard 
3 tablespoons apple cider vinegar (Braggs) 
4 tablespoons extra virgin olive oil 
1 tablespoon flax seed oil (or add more olive oil in place) 
1/2 cup walnuts, toasted and coarsely chopped 
1/2 cup dried cranberries (no sugar added)  
Sea Salt and pepper to taste 

DIRECTIONS:  

Preheat oven to 400 degrees. 
Wash the pears and cut in half. Remove the core and seeds by using a spoon to scoop out the middle. Slice the pears into thin strips and place on a parchment lined baking sheet. Bake for 20-25 minutes until they begin to soften, then remove from oven and cool. 
Whisk the shallot, Dijon and apple cider vinegar together in a bowl. Slowly add in the oils while stirring vigorously. Season with sea salt and pepper. 
Place greens in a bowl and toss with dressing. Greens can sit with the dressing overnight, or add the roasted pears, cranberries and walnuts and serve immediately.

Release

Hiking is one of my releases. When I am out in nature is when I'm most myself.  I release all doubt, comparison, thoughts about my body, looks, weight, and am able to just, "be." There is no one there to judge me and I feel most in my element! Venturing off alone has been both frightening and revitalizing! I've learned how strong I am and know society can distort my view of the world. There is something to be said about stillness and silence.  No deadlines, agenda, notifications, stress, or aspect of time.  It's easy to forget how beautiful the outside world really is when our internal thoughts consume us!  I wanted to share some of my best photos from my hiking adventure!

Pumpkin Spice and Everything Nice



PALEO PUMPKIN PANCAKE SANDWICHES


INGREDIENTS: (all organic if possible)

1/4 cup pumpkin puree
3 tbsp almond milk
1 tbsp honey (optional)
3 eggs
1 tbsp coconut oil, melted, plus additional for pan
1 tsp pure vanilla
1/4 cup coconut flour
1 tsp cinnamon
Pinch of nutmeg
1/2 tsp sea salt
1/4 tsp baking soda


DIRECTIONS:

In a large bowl, whisk together the dry ingredients – the coconut flour, cinnamon, nutmeg, salt, and baking soda. Then in a separate bowl, whisk together the wet ingredients – the pumpkin puree, almond milk, honey, eggs, oil, and vanilla. Add the dry ingredients to the wet ingredients. Stir together until just combined.

Heat a griddle or nonstick skillet to medium heat. Coat pan with coconut oil. Pour about 1/4 cup of batter onto the skillet. Cook for 2-4 minutes until the bottom is cooked through, and then flip. Cook for another 2-4 minutes until lightly browned. Repeat with remaining batter.

Layer two pancakes and insert a layer of nut butter of your choice in between to create a sandwich!


Servings: 6 small pancakes

10 Life Lessons Learned From Running

Seems fitting today after my 6+ mile run in this amazing Fall weather! I didn't start to enjoy running until college; now it's a form of therapy for me. It allows me to release everything I've been holding inside and really feel in tune with my body! 



10 Life Lessons Learned From Running: 

1. Beginning is always the hardest part. Push yourself to keep going. It gets easier.

2. Consistency creates habits, and habits create the results to want to achieve.

3. If you want to get better, pain is unavoidable. Don't shy away from it.

4. If you don't get out of your comfort zone, you'll never achieve your goals.

5. People who do things better than you are your teachers, not your competition.

6. Often, thinking you can't go on any longer is a illusion. You often can.

7. Sometimes things don't go as planned. Accept it and move on.

8. When you're going uphill and you want to quit, don’t. Move slower if you have to, but keep going. You will get there.

9. Happiness shouldn't be put on hold until you cross the finish line. Enjoy as much as you can along the way, even when the going gets tough.

10. Don’t let your desire for improvement rob you of pride in small victories!

Gooey and Oh So Good!

I keep seeing caramel apples everywhere! They were one of my favorite snacks when I was younger.  My mom would cut up apples for my brothers and I and sprinkle them with cinnamon and sugar! Here are the typical ingredients used in the store-bought varieties. I took this photo at Cub Foods yesterday. Lots of sugars, hydrogenated oils (trans-fats) and Genetically Modified Organisms (GMOs)! Eek!! 



Healthier Alternative!! 

Caramel Apple Dip

 Ingredients:

1 cup Medjool Dates, pitted (about 8-10)
2 Tbsp Full-Fat Coconut Milk, canned
¼ tsp Sea Salt
½ tsp Pure Vanilla Extract

Directions:

1. Combine all ingredients in the bowl of a food processor and process until smooth.  
You may need to occasionally scrape down the sides.  If you double the recipe, it will be easier to process if you have a larger capacity food processor.
2. Store in an airtight container in the refrigerator for up to 2 weeks. 

NOTE: Be sure to use organic apples! They are on the Dirty Dozen list.

Apple Season-Storage Tips

It's cooling down at night and Fall seems to be just around the corner!! I love apple orchards, hayrides, pumpkin patches and wineries!! Sadly, apple season doesn't last forever, so it's important to buy extra apples to store for later in the year. Each variety of apples is different, make sure you ask your local orchard about the variety you are buying. Here are a few more generic storage tips to help your apples last into the cold winter months.
  • Avoid storing apples with other fruits/vegetables. The gases naturally released by other fruits/vegetables can make apples soften.  

  • Placing apples in the refrigerator is great for short-term storage. But the refrigerator lacks humidity and can dry apples out. Place them in a perforated plastic bag (often what they are sold in). This will help trap some of the humidity.You can even add a damp paper towel over the bag for extra humidity.  

  • For longer term storage, you can put them in a cardboard box and keep them in a cool, dark place (like a basement or pantry). Its nice to close the box so it limits the airflow, but it doesn't need to be airtight.   

  • Avoid freezing the apples. Ideal storage is between 33-38 degrees Fahrenheit with humidity ranging between 80% and 90%. 

  • Try not to store apples with any bruises or soft spots, this will shorten storage life and cause more fruit decay in the whole group. To help prevent bruises, handle apples carefully and wrap them individually in newspaper before putting them in a box for storage.
