Yummy Snack!!

I know I'm a little late after Cinco De Mayo but I've been craving chips and guacamole ever since my friend and I had the tuna dip at Stellas in Uptown on Friday night!! Decided to make my own tortilla chips and guacamole today!

Corn Tortilla Chips with Guacamole

Ingredients:
Twelve 6-inch corn tortillas (I used the Sprouted Ezekiel Corn Tortillas!)
Sea salt
2 ripe organic avocados
1 Simply organic guacamole dip mix (you can easily use your own spices instead of this mix it was on sale for 99 cents at the Wedge so I bought it because it was simple and convenient!)
Lemon juice


Directions:

Preheat the oven to 350 degrees F.

Stack the tortillas and cut the pile into sixths to make chips. Spread the chips out in a single layer on two large baking sheets and season with salt. Bake until golden brown and crisp, rotating the baking sheets once, about 12 to 15 minutes. Mash up avocados, dip mix and a little lemon juice!! Serve with the chips!! You could even add some tuna, shrimp, beef or chicken to the guacamole if desired.

The corn tortilla chips are a bit healthier than store bought since they are not baked with oil. Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. Avocados are one of the few fruits that provide "good" fats. They also contain glutathione, an antioxidant involved in cell protection from the effects of excess oxidative stress. Avocados are also rich in the antioxidants lutein and zeaxanthin. Dig in!!

Joy

Happiness is a feeling that is triggered by an external experience, such as finding money on the ground or when you land that job promotion, while joy originates from within.

Joy is a return to the deep harmony of body, mind, and the spirit that was yours at birth and that can be yours again. Once this has been recaptured, there is no need for stimulants, depressants, or anything else that must be bought, hidden, injected, inhaled, turned on, or turned off. You needed none of these things in childhood, when a sunny day and the love of your family was enough to fill you with joy. That openess to love, that capacity for wholeness with the world around you, is still within you. If addiction has been a part of your life for some time, you may feel it is impossible to regain your pre-addicted self. But it IS possible. Granola!!!

Decided to make some of my own granola today!! Just threw some ingredients together like usual without an actual recipe!! hahaha



Ingredients:


Organic Rolled Oats

Organic Blackstrap Molasses

Bee-Free Honee

Sea salt

Organic Almonds

Organic Walnuts



I combined all this together and put in oven for about 20-30 minutes when I was roasting my beets then let it cool on some parchment paper and a cooling rack. Notice I did not use oil in mine like the store-bought varietes contain.



Oats-full of fiber, stablize blood sugar levels, lower cholesterol, manganese, selenium, Magnesium, B vitamins.


Almonds-calcium, magnesium, Vitamin E, protein, folic acid, phosphorus, fiber


Walnuts-fiber, protein, antioxidants, B Vitamins, Omega 3s, magnesium


Blackstrap Molasses-Rich in iron, potassium, copper, manganese, magnesium



Suggestions of other ingredients you could use:

flaxseeds, agave nectar, any type of seeds or dried fruit, nut butters, cinnamon, ginger, nutmeg, vanilla, coconut, regular honey, raisins, maple syrup, wheat germ, lemon juice, and etc!
